Fesenjoon (Walnut and Pomegranate Stew)

Servings: 4-6

 

Recipe

INGREDIENTS

- 2 large yellow onions, finely chopped
- 2 pounds chicken filet
- 2 cups ground walnut
- 2 tbsp rose water
- 1/2 tbsp Saffron, dissolved in 6 tbsp of hot water
- 1 tbsp Turmeric
- 1 cup water
- 1/2 cup pomegranate molasses
- 1 tbsp sugar
- Salt & pepper as needed
- 2 tbsp olive oil

COOKING INSTRUCTIONS

Sauté the onion in olive oil until it softens. Add salt, pepper, and turmeric.
Add the chicken filets and let them cook until golden brown.
In another pan, saute the ground walnuts for a few minutes. ( Do not add any oil)
Now add the water to the walnuts.
Take out the half-cooked chicken, and add the walnut mixture to the onions and let them cook for 20 minutes.
Now add the pomegranate molasses and sugar. Mix well and cook for another 20 minutes.
Now it's time to put the chicken filets back into the stew.
Add the rose water and saffron.
Finally, let it cook for another 10 minutes.
